Prodornost „cava potpisa“ odmah se registrira na nosu. Kao da postoji nešto karakteristično za sve „cava“ pjenušce u tom smislu… već na nosu je jasno i da je brut, dok između sitnih mjehurića izbija voće, svježa trešnja. Moje troipolgodišnje dijete kaže da je narančaste boje. Dapače, inzistira da je narančasto unatoč ili upravo zbog mojeg prijedloga da bi boja mogla biti crvena 🙂
Začudo, ponestalo mi dimljenih lososa u prostoriji za sušenje koja mi je odmah kraj nepostojeće prostorije za biljar i trofeje sa safarija 😉 ,a koje bi ovaj pink perlator okusa trešnje kojeg vrtim u čaši isprao s nepca u hipu. Ova Lavit inačica suholjavog cava rose-a nosila bi se bez problema i s pršutom (kojeg također nije bilo btw). Jer okus je voćan, postojan i intenzivan. Dominantna sorta je Trepat, zastupljena s 80%, dok ostatak dijele „Garnatxa“ i „Monestrell“ kako kažu u Kataloniji.
Sasvim suvisao prijedlog mi se čini kombiniranje s jelima od tjestenine, pizzom, tapasima i sl. Kiseline bi se lijepo uklopile i s umacima i nadjevima, a osvježavajući mjehurićasti efekt bi zadržao izražajnost, jasnoću.
